Sauteed Spinach
Source: Lisa Farley (Entered by Lisa Farley - L)Easy, great tasting side dish. You can substitute chard if you wish.
Sometimes I stir this into the sauce for chicken picata or over a Spanish omlette.
Serves: 3-4
Vegetarian!
Ingredients
2 orders
Helen's spinach
2 Tbsp.
olive oil
2-4 cloves
garlic, depending on size and taste
salt to taste
freshly ground pepper to taste
butter
lemon
Step by Step Instructions
- Rinse and spin dry spinach. Tear into bite sized pieces.
- Heat oil in Dutch oven. Saute garlic for one minute. Add spinach, stir, cover and cook 2 minutes.
- Uncover and continue to cook until spinach is completely wilted. sprinkle with salt and pepper. Stir in a little butter.
- Place in serving bowl and squeeze a lemon half over the spinach.
