Garlic Scape Pesto

These scapes must be removed in order for the plant to expend its energy producing garlic instead of seeds. Farmer Helen does not discard them. She uses them just as she uses garlic.
She developed this recipe for pesto using the scapes. Its flavor, while garlicky, is a bit more subtle than garlic. Farmer Ben said," I bet that would make delicious garlic bread. It does!"
Serves: About 1 cup of pesto
Ingredients
10 stems
garlic scapes
1/3 cup
grated Parmesan cheese
1/3 cup
slivered almonds or raw cashews
1/2 cup
olive oil
pinch
sea salt
Step by Step Instructions
- Put garlic scapes, cheese, and nuts in food processor
- Whir to chop and blend
- Add oil and mix
- Add salt to taste
- Use immediately or cover tightly and refrigerate
